Boiled Greens (Chorta Vrasta)

Ingredients:

  • 1 kg (2.2 lbs) fresh greens (such as dandelion greens, spinach, or other wild greens)

  • Water, enough to boil the greens

  • 1–2 teaspoons salt

  • 2–3 tablespoons olive oil

  • 1–2 tablespoons lemon juice (or vinegar)

Instructions:

  1. Clean the greens: Wash the greens thoroughly in cold water to remove dirt and grit. Trim any tough stems if needed.

  2. Boil the water: Fill a large pot with water and add the salt. Bring it to a boil.

  3. Cook the greens: Add the greens to the boiling water. Boil for 5–10 minutes, until tender but still vibrant green.

  4. Drain: Remove the greens from the water and let them drain in a colander.

  5. Serve: Arrange the greens on a plate, drizzle with olive oil and lemon juice (or vinegar). Mix gently and serve warm or at room temperature.
