Fried Anchovies Recipe

Ingredients:

500g fresh anchovies, cleaned and gutted

1 cup all-purpose flour

Salt, to taste

Black pepper, to taste

Lemon wedges, for serving

Olive oil or vegetable oil, for frying
Instructions:

Prepare the anchovies: Rinse the anchovies under cold water and pat them dry with paper towels.

Season: Lightly season the anchovies with salt and pepper.

Coat with flour: Place the flour in a shallow dish and dredge each anchovy, making sure it's evenly coated. Shake off any excess flour.

Heat the oil: Pour enough oil into a frying pan to cover the bottom (about 0.5–1 cm deep) and heat over medium-high heat.

Fry the anchovies: Fry the anchovies in batches for 2–3 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan.

Drain: Remove the fried anchovies with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Serve: Serve immediately with lemon wedges on the side.
