Greek Fava

📝 Ingredients:

1 cup yellow split peas (fava)

1 medium onion, chopped

1 bay leaf
-
4 cups water
-
1/4 cup extra virgin olive oil

Juice of 1 lemon

Salt & pepper to taste
👨🍳 Instructions:

Rinse the fava well until the water runs clear.

Boil the peas with the bay leaf and onion in 4 cups of water. Skim off any foam.

Simmer for 40–45 minutes, stirring occasionally, until very soft and creamy. Add water if needed.

Remove the bay leaf and blend the mixture (or mash) until smooth.

Season with salt, pepper, lemon juice, and drizzle with olive oil.
🍋 Serving:
Serve warm or at room temperature, topped with extra olive oil, sliced onions, capers, or a sprinkle of paprika. Perfect with bread or pita.
