Traditional Greek fried potatoes

Ingredients:

  • 4 medium potatoes (preferably firm, like Yukon Gold)

  • Olive oil (or sunflower oil) for frying

  • Sea salt, to taste

  • Optional: oregano, feta, or lemon for garnish

Instructions:

  1. Peel & cut the potatoes into thin strips or wedges, depending on your preference.

  2. Soak in cold water for 20–30 minutes to remove excess starch (this makes them crispier).

  3. Pat dry thoroughly with a clean towel.

  4. Heat the oil in a deep frying pan over medium-high heat.

  5. Fry the potatoes in batches until golden and crisp (about 8–10 minutes), turning occasionally.

  6. Remove & drain on paper towels.

  7. Season generously with sea salt, and sprinkle with oregano if desired.

  8. Serve hot, optionally topped with crumbled feta and a squeeze of lemon 🍋.
